Mary, St. Vincent de Paul's talented baker, showed us how she makes a batch of Christmas cookies to celebrate the season.
To make 300 cookies: 135 oz. Flour 2 oz. Baking Powder 1 oz. Salt 80 oz. Butter 20 oz. Cream Cheese 70 oz. Sugar 10 eggs (18 oz.) 3 oz. Vanilla | To make 30 cookies: 3 cups Flour 1.5 tsp Baking Powder 0.5 tsp Salt 1 cup Butter 2 oz. Cream Cheese 1 cup Sugar 1 egg 1.5 tsp Vanilla |
1. Mix Flour, Baking Powder and Salt in a bowl. Set aside.
2. In mixing bowl with paddle attachment, mix Butter, Cream Cheese and Sugar until fluffy.
3. Add Eggs one at a time, mixing well after each addition
4. Add Vanilla and mix to incorporate.
5. Divide dough into about 30.5 oz. balls
6. Flatten on parchment to about 1/4'' thickness. Cover with plastic wrap.
7. Refrigerate for an hour.
8. Preheat oven to 350° (convectional oven) or 300° (convection oven).
9. Cut cookies into desired shapes and place on parchment lined sheet pans.
10. Bake for 8-10 minutes, rotating pans after about 5 minutes.
11. Cool completely before decorating.
