Cooking up change after Type 2 diabetes diagnosis

Jonathan Escobar finds community support, nutrition help at SVdP's Ivy Center for Family Wellness

In the bustling heart of Phoenix, Jonathan Escobar, a 33-year-old lead line cook at Scottsdale Plaza, navigates the high-stress world of culinary arts with a unique perspective. After being diagnosed with Type 2 diabetes, Jonathan’s life took an unexpected turn. Seeking support, he found hope and guidance at St. Vincent de Paul’s Ben & Catherine Ivy Center for Family Wellness.

Jonathan's journey began with a frightening experience at work when his vision blurred, and he felt overwhelmingly ill. A trip to the emergency room confirmed his diabetes diagnosis, a revelation that filled him with fear and uncertainty. 

“It was like crossing a bridge when you're afraid of heights,” Jonathan said, underscoring the emotional turmoil he faced.

Fortunately, Jonathan found solace and guidance at the Ivy Center for Family Wellness. The center's comprehensive approach to diabetes management and education transformed his outlook on life and health. Through educational classes and personalized care, Jonathan learned to navigate his condition without sacrificing his passion for food. That was also when Jonathan met SVdP Ivy Center for Family Wellness Director Elvia Madrid, who (in addition to many of her staff) is a Registered Dietitian and Certified Diabetes Health Educator. 

“The dietitian has been absolutely amazing,” he shared, highlighting the pivotal role of healthcare providers in his journey.

The Ivy Center's atmosphere stood out to Jonathan as particularly positive and uplifting. Unlike past experiences where he felt dehumanized in medical settings, the center offered a community that listened and responded to his needs. This environment fostered a sense of belonging and empowerment, allowing Jonathan to embrace lifestyle changes with confidence.

Jonathan's girlfriend, Cassandra, played an integral role in his support system. Her unwavering encouragement helped him stay committed to managing his diabetes effectively. 

“I wouldn't be here if she didn't help me get in here,”  Jonathan acknowledged, emphasizing the importance of having support.

One of Jonathan's proudest achievements was stabilizing his blood sugar levels, which initially measured at dangerous levels as high as 600. Healthy blood sugar levels after eating usually fall under 180. The Ivy Center's classes taught him about portion control and healthy food choices, helping him to maintain his blood sugars within a healthy range. Jonathan shared that this progress “not only improved his physical health but also boosted his mood and energy levels.”

Despite the challenges of balancing diabetes management with a demanding job in the culinary industry, Jonathan hopes to “stay as determined as possible to make mindful choices.” He has adapted by finding healthier alternatives for his favorite dishes, ensuring that he can still enjoy the foods he loves without compromising his health.

“Jonathan’s story is a reminder that it’s possible to take charge of your health with the right support," said Elvia Madrid, SVdP director for the Ben & Catherine Ivy Center for Family Wellness. "It’s proof that when people are equipped with the tools, knowledge, and encouragement they need, they can achieve lasting, positive changes.” 

By providing culturally sensitive care and fostering an environment of understanding and support, SVdP's Ivy Center helps individuals like Jonathan take control of their health and live fulfilling lives.

For those newly diagnosed with diabetes, Jonathan offers some advice.

“Keep your head up,” he said. “It's going to be hard at first, but just keep pushing.”

His journey illustrates that with perseverance, support, and education, managing diabetes can become an opportunity for personal growth rather than a burden. Diabetes does not have to feel like the end of the world, and with good management, people can continue living typical lives.
